Episode 1- Cook with Srush
Some recipes happen by accident. This one happened because I was indecisive on Valentine’s Day and frankly, I have no regrets about it. What started as “I can’t choose” turned into the most layered, creamy, ridiculous jar of happiness I’ve ever made. And then I finished the whole thing alone. Still no regrets. 🫙💜
Servings: 1 jar · Chill time: Overnight
Ingredients
Biscuit Base
• 1 packet Lotus Biscoff biscuits, crushed
• 2 tbsp butter, melted
Cheesecake Cream
• ½ cup whipping cream
• 150g cream cheese
• Powdered sugar, to taste
Blueberry Sauce
• ¼ cup fresh blueberries × 2
• ⅓ cup water × 2
• Sugar, to taste
• A pinch of cornstarch
• Squeeze of lemon
Instructions
1. Crush the Biscoff biscuits into fine crumbs and mix with melted butter until it comes together like wet sand. Set aside.
2. Whip the cream cheese and whipping cream together with powdered sugar until thick and cloud-like. Adjust sweetness to your liking. Refrigerate until needed.
3. In a small saucepan, combine blueberries, water, sugar, cornstarch, and a squeeze of lemon. Cook on medium heat until the sauce thickens and the berries burst. Let it cool completely.
4. Start with a biscuit layer, then cheesecake cream, then blueberry sauce and repeat until your jar is full. Finish with crushed biscuits on top.
5. Refrigerate overnight. The layers settle, the flavours meld, and by morning — magic. ✨
Srush’s Tip 💌
More layers = more fun and more yum! Also make sure the blueberry sauce is fully cool before layering or it’ll melt into the cream. Patience is the secret ingredient here! 🫐
